Let’s make some Holiday mini cheesecakes!
I am sure I am not the only one who loves cheesecake! And there isn’t anything much better than homemade cheesecake. In light of the holiday season I have some very merry cheesecakes for you!

Holiday Mini Cheesecakes
Crust:
1¾ c. Graham cracker or Ginger snap crumbs
¼ c. Finely Chopped Pecans
1 TBLS. Sugar
½ tsp. Nutmeg
½ c. Melted Butter
Mix all together and press into the bottom of cupcake liners.
Preheat oven to 350°F
Filling:
16oz. Cream Cheese Softened
8oz. Sour Cream
½ c. Granulated Sugar
½ c. Packed Brown Sugar
2 TBLS. All-Purpose Flour
1 tsp. Vanilla
3 Eggs, lightly beaten
In a large mixing bowl mix together Dairy, Sugars, Flour, and Vanilla until well combined. Stir in eggs. Pour into cupcake liners. Bake for 25 minutes, or until the top splits and is no longer jiggly.
Let cheesecakes cool for 2 hours. After cheesecakes are cool top them with the topping, then chill for 4 hours.

Topping:
4 c. Cranberries
1 c. Sugar
1 c. Water
In a pot combine cranberries, sugar, and water.
On medium high heat cook the cranberries until they all pop. Let cool and top cheesecakes after they cool.
